Terms of sale.

How an order becomes a cold box at your door, what happens if it arrives warm, and the labelling rules every tin follows.

Draft 0.1, for review by counsel · [Company legal name] · Governing law: [State] · Write to [Email]

In short

  • An order is a request until we confirm it by email. Nothing is charged before that.
  • We pack Monday to Wednesday and ship overnight on gel ice, so boxes land Tuesday to Thursday.
  • Food cannot be returned. If a box arrives warm or damaged, photograph it and write within 24 hours: we replace or refund.
  • Keep tins at 28–32°F. Never freeze sturgeon caviar.
  • “Caviar” on this site means sturgeon roe only. Red roe is named by its fish.

These terms

These terms apply when you buy from Vernier, a trading name of the seller named above. By sending an order request you accept them. Our privacy notice explains how we handle your information.

What we sell

  • Caviar means salted roe of farmed sturgeon, and nothing else. Each tin names its species in Latin; hybrids are written male × female.
  • Red roe is always named by its fish: keta salmon roe, trout roe.
  • Every tin and jar carries its species, net weight, lot code, packing date and best-before. Sturgeon tins add the origin and CITES label fields.
  • Grain size and salt are measured on a sample from each lot and printed as numbers. Roe is a natural product: grains in your tin vary around the printed figure.
  • Photographs show the product as packed. Color varies from lot to lot within the range named on the label.

Orders and prices

Prices are in US dollars and shown on each product. Sales tax is added where it applies. Shipping is a flat fee within the contiguous US, free above an order threshold.

An order is accepted when we send a confirmation email naming the delivery day. We may decline or limit an order, for example when a lot sells out or a price was shown in error; if we do, we tell you before any charge and refund anything already paid.

Delivery on ice

Packing days
Monday, Tuesday and Wednesday only, so no box waits out a weekend in a depot.
Cut-off
Orders confirmed by 11:00 AM ET on a packing day leave that day.
Service
Overnight, delivered by 12:00 PM on the day you choose.
Where
Street addresses in the contiguous United States. Alaska, Hawaii and US territories on request. No PO boxes, APO or FPO.
On the day
Someone should be there to take the box in. The liner and gel ice hold the band for a limited number of hours.

Carrier delays caused by weather or events outside our control are rare but possible. If your box will be late, we email you and, where it is safer, hold it in our cold room for the next packing day. See Shipping for the full cold chain.

Perishables policy

Caviar and roe are perishable. For food safety we cannot take back a tin or jar once it has left our cold room, opened or not.

If your box arrives warm, damaged, incomplete or wrong:

  • Keep the tins sealed and put them in the fridge. Do not eat from a tin that arrived warm.
  • Photograph the box, the open liner, and each tin with its band and lot code.
  • Write to us at the email above within 24 hours of delivery, with your order number and the photos.

We replace the order on the next packing day or refund it in full, as you prefer. You do not send anything back.

We cannot cover a box that sat unclaimed after a confirmed delivery, a wrong address given at checkout, a refused delivery, or tins kept outside the 28–32°F band after arrival.

Storage and food safety

Hold
28–32°F, at the back of the coldest shelf. Most home fridges run 37–40°F, so set the tin on a bowl of ice.
Unopened
Up to four weeks, and never past the best-before on the band.
Opened
Eat within three days. Press the lid back on between servings.
Freezer
Never for sturgeon caviar. For red roe, follow the line on the jar.
Allergen
Contains fish.

Our caviar and roe are ready-to-eat, salted and not cooked. If you are pregnant, have a weakened immune system or are serving young children or older guests, ask your doctor about ready-to-eat fish products first.

CITES and borders

All sturgeon species are listed under CITES Appendix II. Every sturgeon tin we sell carries the CITES label fields: species code, source code, country of origin, year of harvest, processing plant and lot. Red roe is not CITES-listed.

We sell for delivery within the United States only and do not ship abroad. If you carry a tin across a border, rules on personal allowances and permits vary by country; check them before you travel. Do not resell or export our caviar without the documents the law requires.

Age

Caviar and roe are food, so no minimum age applies to buy them and we do not ask for ID at delivery. We do not sell alcohol. If we ever add wine or spirits to a release, a 21+ rule and adult signature on delivery will apply to that order.

Gifts and lot lookup

You may send an order to someone else. Give an address where they can take the box in on the chosen day; the perishables policy above still applies. Gift boxes travel without prices. A gift band prints the name and date you type, exactly as you type it.

Lot certificates from Lot lookup show the figures we measured for that lot.

Changes and contact

We may update these terms. The version that applies to an order is the one shown when we confirm it.

Contact details are at the top of these terms.
